So many Christmases, so little time December 13, 2007

Ryan and I are planning on having our Christmas together this weekend – probably on Sunday since we have a party to go to already on Saturday. He was the one who suggested it – he can’t stand waiting for me to open presents. I think he enjoys giving me presents more than he enjoys getting them. And I enjoy getting him stuff, so it’s win-win!

Next week we’re driving cross country for our holiday celebrations. And why are we driving cross country, you may ask? American Airlines was the Grinch that tried to ruin our holiday plans last year. Due to a technical problem on the plane, we weren’t able to leave Orange County in time to make our connecting flight from Dallas to Omaha. American Airlines has yet to refund any money to us and basically just kept shuffling the problem on to someone else. They wouldn’t have been able to get us anywhere until the 26th, I believe. And, as most of you know, that is the day AFTER Christmas. Not doing me much good, American Airlines. They make me so irritated that I may have to join the other AA. (Kidding mom!)

Anyway, we rented a car and drove from Dallas to Omaha, NE. And since it worked out so well last year, with neither of us wanting to kill the other one, we decided we’d do it again for the full trip.

First, we’re going to head to Michigan to see my family. We’ll probably get there on the 24th and we’ll actually be there on Christmas, which will be nice. I was with Ryan’s family on Christmas day last year and it was a weird experience – tons of children, the focus wasn’t on me…. Ok, I’m kidding about that last part, but it was very different from what I’m used to (which doesn’t mean “bad”, Ryan, if you’re reading this).

Then we’re  heading back to the middle of the country to have Christmas with Ryan’s family in Nebraska. It’ll be nice to see his parents, sisters and brothers-in-law again – they’re a good group. And one of Ryan’s sisters just had another baby so that should be interesting for me. I’ve never really dealt much with children but I guess those days are over because I’m an aunt now. After a few days in Nebraska, we have to head back to California. I have an all-school meeting on January 2 (yippee).

People kept asking me what I wanted for Christmas this year. Yes, I was able to make a list of some things that would be cool but the main thing I’m looking forward to is seeing family.

 

Recipe: Slow Cooker Pot Roast December 13, 2007

(Can you tell I love my slow cooker?)

The recipe below is what I’m making for dinner tonight. It’s already in the slow cooker and smells wonderful!

  • 3-5 lb. roast (beef)
  • 1 onion
  • 5 large carrots, peeled (or one large bag of baby carrots, chopped)
  • 4 potatoes
  • 1/2 lb. fresh green beans (optional)
  • 1 pkg. McCormick pot roast or beef stew seasoning
  • 1/2 cup catchup
  • 1 cup water
  • Pepper, basil, and other seasoning to taste
  1. Chop onion into small pieces and sauté on stove.  When soft, place onion on bottom of slow cooker; place roast on top of onion.
  2. Mix McCormick seasoning with water and pour over roast. Add catchup and stir.
  3. Cover and leave on high. Cut up potatoes and carrots and add to pot.
  4. Sprinkle pepper, basil, and other seasonings to taste. Turn on low and cook for 6 or more hours. The longer you can leave this cooking, the better.
